Fried Baltic Herring

Ingredients:
- 1 kg herring fillets
- 150 g (5 oz or 1/2 c) onions
- 50 g (3 tbsp) dill
- 100 g (6 tbsp) butter
- 50 g (3 tbsp) rye flour
- 50 g (3 tbsp) wheat flour
- salt
- white pepper
Directions:
- (Optional.) Simmer chopped onions in butter.
Remove onions from a pan and add chopped dill.
- Open herring fillets. Put half of herrings on a table, skin side down.
Season with salt and ground white pepper.
- (Optional.) Sprinkle onion-dill mixture over herrings.
- Season rest of herrings with salt and white pepper.
- (Optional.) Add rest of herrings as a cover on top of stuffed fillets.
- Mix flours together.
- Cover Baltic herring fillets with flour mixture.
- Fry Baltic herrings fillets in a frying pan with butter.
Notes:
- I've not tried this recipe since I've not been able to find Baltic herring.
- I think this might work with Tillapia filets I've seen in the store.
- All the weights and measures need to be checked—I'd first
want to do this without the onion and dill mixture.
