Basic Roast Chicken

Ingredients:
- 2 1/2- to 3 lb chicken
- rosemary bunch
- 1/2 lemon
- butter
Directions:
- Preheat oven to 325 F (160 C).
- Prepare the chicken. Remove the excess fat from the chicken,
rinse cavity with cold water, then pat the chicken dry with
paper towels. Season the cavity and the chicken exterior
with salt and pepper, then fill with rosemary and half lemon.
- Rub the chicken with butter and insert butter under the skin.
- Cook for 30 min per pound, e.g., 90 min for a 3 lb chicken.
- Chicken is done when thermometer registers 165 F.
- Once out of the oven, let chicken rest 15 min.
