Beef & Broccoli

Ingredients:
- flank steak
- 2 tsp corn starch
- 2 tsp soy sauce
- 2 tsp sesame oil
- freshly ground black pepper
- pinch of salt
- 1 clove garlic
- 1 crown broccoli
- 1/8 cup water
Preparation:
- Combine corn starch, soy sauce, sesame oil, and black pepper in bowl.
Stir mixture with fork until smooth (no lumps).
- Slice meat across grain. Immerse meat in bowl, marinate.
- Meanwhile, mince garlic.
- Cut up broccoli, put in another large bowl.
Cooking:
- In a frying pan, heat 1 tbsp high-heat oil (peanut or grapeseed) until hot.
- Add broccoli, move around so it does not burn.
- Add water and salt, stir, and cover.
Cook about 2-3 min, stirring semi-frequently.
- Remove broccoli, replace in bowl, cover with lid to keep warm.
- Add more oil to frying pan, add beef. It should sizzle. Stir fry
the meat until halfway done. Add garlic, continue stir frying
until meat is cooked.
- Drain water from broccoli, add broccoli pieces to frying pan and toss.
- Serve.
