Grilled Drumsticks

Brine: Chicken: Directions:
  1. Place salt in large bowl, add cold water to dissolve salt.
  2. Add chicken, making sure to submerge drumsticks.
  3. Cover bowl with plastic wrap and refrigerate 30 min—1 hr.
  4. Preheat grill on high, all three burners, e.g., 15 min.
  5. Mix together spice rub.
  6. Pat drumsticks dry with paper towels, roll in spice rub until evenly coated.
  7. Clean and oil grates, turn off all but one burner. Arrange drumsticks over turned-off burner(s). Cover and cook 25 mins.
  8. Rearrange drumsticks so that the farthest from heat source are now closer and vice versa. Cover and cook another 25 mins.
  9. Remove from grill, tent with foil, 10 mins. Serve.
