Grilled Drumsticks

Spice rub:
- 3 tbsp brown sugar
- 1 tbsp paprika
- 1 tbsp chili powder
- 2 tsp garlic powder
- 3/4 tsp pepper
- 3/4 tsp salt (can use smoked salt if you have it)
- 1/4 tsp cayenne pepper (or less)
Brine:
- 1/2 cu salt (Kosher)
- large bowl of water
Chicken:
Directions:
- Place salt in large bowl, add cold water to dissolve salt.
- Add chicken, making sure to submerge drumsticks.
- Cover bowl with plastic wrap and refrigerate 30 min—1 hr.
- Preheat grill on high, all three burners, e.g., 15 min.
- Mix together spice rub.
- Pat drumsticks dry with paper towels, roll in spice rub until
evenly coated.
- Clean and oil grates, turn off all but one burner. Arrange
drumsticks over turned-off burner(s). Cover and cook 25 mins.
- Rearrange drumsticks so that the farthest from heat source are now
closer and vice versa. Cover and cook another 25 mins.
- Remove from grill, tent with foil, 10 mins. Serve.
