Lemon Bars

Ingredients:
- Crust
- 3/4 c soft butter
- 3/4 c white sugar
- 2 c all-purpose flour
- Filling
- 1 1/2 c white sugar
- 1/4 c all-purpose flour
- 4 eggs
- 2 lemons, juiced (about 1/2 c)
- zest of 1 lemon
- 1 1/2 tsp fresh grated ginger
Directions:
- Preheat oven to 350 degrees F.
- In a medium bowl, blend together first three ingredients. Dough
will be crumbly. Press into the bottom of an un-greased
9x13 pan.
- Bake for 15 min, or until slightly golden. In another bowl,
whisk together 1 1/2 c sugar and 1/4 c flour. Whisk in
eggs, lemon juice, lemon zest, and ginger. Pour over the
baked crust (do not let crust cool).
- Bake for an additional 20 min. The bars will firm as they cool
- Dust with powdered sugar and serve.
