Linguine and Clams

Cook Time:10-12 min.

Ingredients:

Directions:
  1. Bring water to boil for pasta. Once boiling, cook linguine according to package directions.
  2. Meanwhile, drain clams, reserving 1/2 cup liquid.
  3. Heat oil and butter in small saucepan. Add garlic, saute until golden.
  4. Blend in reserved clam liquid and 2 tbsp parsley. Simmer 3 to 5 mins.
  5. Add lemon zest, rest of parsley and clams, cook about 2 mins longer.
  6. Drain linguine, place in heated serving bowl. Spoon hot clam mixture over pasta. Toss to mix. Serve with Parmesan, if using.
Yield: makes 2 servings
