Linguine and Clams

Ingredients:
- two 6 1/2 oz cans baby clams (chopped)
- 1 1/2 tbsp olive oil
- 1 1/2 tbsp butter
- 3 or 4 cloves garlic, minced
- 3 tbsp chopped parsley
- 7 oz linguine
- 1 tsp lemon zest (finely shredded)
- grated Parmesan cheese (optional)
Directions:
- Bring water to boil for pasta. Once boiling, cook linguine
according to package directions.
- Meanwhile, drain clams, reserving 1/2 cup liquid.
- Heat oil and butter in small saucepan. Add garlic, saute until
golden.
- Blend in reserved clam liquid and 2 tbsp parsley. Simmer 3 to 5 mins.
- Add lemon zest, rest of parsley and clams, cook about 2 mins longer.
- Drain linguine, place in heated serving bowl. Spoon hot clam mixture
over pasta. Toss to mix. Serve with Parmesan, if using.
Yield: makes 2 servings
