Polish Crepes (Nalesniki)

Ingredients:
- 2 eggs
- 1 1/2 cups milk
- 3 tbsp water
- 1/2 cup sifted flour
- 1/2 tsp salt
Mix:
- Beat eggs until light.
- Add milk and water and beat again a few times.
- Add remaining ingredients and scrape sides (e.g., with a wide spatula).
Cooking:
- Heat small frying pan (about 6 in diameter).
- Add a tablespoon of butter and roll around covering the entire pan.
- Add about 3 tbsp of batter rolling it around to make it even.
- Cook the bottom side only over moderate heat.
- Remove from pan and place on large platter until ready to fill.
- Repeat until mix is all gone.
