Nanaimo Bars

Ingredients:
- 1/2 c soft butter
- 5 tbsp granulated sugar
- 5 tbsp cocoa
- 1 tsp vanilla
- 1 egg
- 2 c graham wafer crumbs
- 1 c cocoanut
- 1/2 c chopped walnuts
- 4 tbsp butter
- 3 tbsp milk
- 2 1/2 tbsp vanilla custard powder
(cook & serve vanilla jell-o powder, not instant)
- 2 c icing sugar
- 4 squares semi-sweet chocolate, melted
- 1 tbsp butter
Mix:
- Place the 1/2 cup butter, sugar, cocoa, vanilla and egg in bowl.
Set bowl in pan of hot water. Stir until butter is melted.
Mix graham wafer crumbs, cocoanut and walnuts; add to cocoa mixture.
Pack into ungreased 9" x 9" pan.
- Melt the 4 tbsp butter and stir in custard powder, then combine with
milk and icing sugar; cream; spread over first mixture in pan.
Chill until firm.
- Melt chocolate with the 1 tbsp butter and spread evenly over top.
Chill until firm.
- Cut in bars to serve.
Servings: about 36 bars
