Pork and Peppers

Ingredients:
- 2 tbsp olive oil
- 1/2 lb pork tenderloin, cut into 1/2 in thick medallions and pounded thin
- 1 small onion, thinly sliced
- 2 tsp garlic, minced
- 1 red, yellow, or orange bell pepper, thinly sliced
- 1/4 cu dry white wine
- 1 tbsp fresh oregano, chopped, or 1 tsp dried oregano
Instructions:
- Season pork with salt and pepper.
- In a large saute pan, heat hte olive oil and saute onions 3-4 mins
over medium-high heat.
- Add the garlic and peppers and saute until peppers are tender, about 5 mins.
- Add pork to the saute pan and cook until browned on all sides, about 5 mins.
- Add the wine (and dried oregano if using) and simmer about 3 mins until
wine is slightly reduced.
- Add fresh oregano if using.
- Serve over noodles or rice.
