Quick Bread

Prep Time:3 hrs. (or more, even overnight)
Cook Time:30 min.

Ingredients:

  • 1 cu water
  • 1/2 tsp dry yeast (or 3/4 tsp fresh yeast)
  • 1 tsp sugar
  • 2 1/2 cu bread flour
  • 1 tsp salt
Directions:
  1. Mix the yeast, sugar in water.
  2. Add in the flour, salt and mix with wooden spoon until there is no more dry flour.
  3. Cover and let rest for 30 mins.
  4. With a wet hand stretch the 4 sides of the dough and fold to the center.
  5. Lift the dough and slap it back (about 4 times).
  6. Cover and let rest for 30 mins.

  9. Cover and let rise for 2 hours.
  10. On a bread board, sprinkle flour, cut dough into 4 equal parts.
  11. Make each of 4 pieces into a ball (gently): flatten a little and roll into a ball.
  12. Rub pinched seal side against surface to seal it.
  13. Let 4 balls rest for 10 mins.
  14. Flatten gently then roll up into mini loaves.
  15. Line baking tray with parchment paper.
  16. Place loaves on paper-lined tray.
  17. Sprinkle tops with flour and then smooth out with hand.
  18. Score top of each mini loaf.
  19. Sprinkle water around edge of pan, all 4 sides, then cover with another tray.
  20. Bake at 450 F for 20 mins.
  21. Remove top tray, bake uncovered at 390 F for 10 mins.
