Salmon on a Plank

Spice Rub:

Fish: Directions:
  1. Soak wood plank for at least 1 hour (use something to weight it down so it stays submerged).
  2. Fire up grill for indirect medium heat (350 deg).
  3. Drizzle salmon with olive oil and cover with spice rub.
  4. Remove plank from water, pat dry. Use a barbeque brush and cover one side of plank with oil. Place fish on oiled side, place plank on grill, close lid.
  5. Cook approx. 10-12 minutes, depending on thickness of plank and fish.
Notes:
  1. In practice with a 1/2 in. plank, fish took at least 20 minutes, almost 30 with heat turned up.
