Salmon on a Plank

Spice Rub:
- 2 tbsp brown sugar
- 1 tbsp + 1 tsp smoked paprika
- 1 1/2 tsp kosher salt
- 1 tsp chopped fresh oregano
- 3/4 tsp freshly ground black pepper
- 1/2 tsp minced garlic
Fish:
Directions:
- Soak wood plank for at least 1 hour (use something to weight it
down so it stays submerged).
- Fire up grill for indirect medium heat (350 deg).
- Drizzle salmon with olive oil and cover with spice rub.
- Remove plank from water, pat dry. Use a barbeque brush and cover
one side of plank with oil. Place fish on oiled side, place
plank on grill, close lid.
- Cook approx. 10-12 minutes, depending on thickness of plank and
fish.
Notes:
- In practice with a 1/2 in. plank, fish took at least 20 minutes,
almost 30 with heat turned up.
