Sausage and Kale Soup

Ingredients:

Instructions:
  1. Heat 2 tbsp olive oil in a large soup pot.
  2. Saute onion, carrot, leeks, and garlic for 10 mins, seasoning with black pepper and red pepper flakes.
  3. Add italian sausage, cook until no longer pink, strain excess fat.
  4. Add stock, bring to a boil, then simmer for 30 mins.
  5. Add kale or chard leaves and let simmer another 15 mins.
  6. Garnish with grated parmigiano and serve.
Serves: 4-6
