Sausage and Kale Soup

Ingredients:
- 2 tbsp olive oil
- 1 tsp garlic, finely chopped
- 3/4 cu finely chopped onion
- 3/4 cu finely chopped peeled carrot
- 3/4 cu thinly sliced leeks
- 1 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
- 8 oz italian sausage
- 5 cu vegetable stock
- 4 cu stemmed and coarsely chopped kale or chard leaves
- Parmigiano Regano for garnish.
Instructions:
- Heat 2 tbsp olive oil in a large soup pot.
- Saute onion, carrot, leeks, and garlic for 10 mins, seasoning with
black pepper and red pepper flakes.
- Add italian sausage, cook until no longer pink, strain excess fat.
- Add stock, bring to a boil, then simmer for 30 mins.
- Add kale or chard leaves and let simmer another 15 mins.
- Garnish with grated parmigiano and serve.
Serves: 4-6
